Matcha & Black Sesame Brioches

Matcha and Black Sesame Rolled Buns 🍵

Looking to cook with matcha?

Our friend Noémi from REMBOBINE – Back to basics has created a delicious recipe for matcha and black sesame rolled buns. A gourmet combination that marries the earthy taste of matcha with the rich, slightly toasted notes of black sesame.

Enjoy them warm with their matcha glaze!

Ingredients

Black Sesame Filling

  • 100 g black sesame paste

  • 30 g unrefined sugar

  • 40 g soft butter

  • 45 g coconut cream

  • A little water, if needed, to achieve a smooth, firm texture

  • Golden and black sesame seeds

Matcha Buns

  • 470 g flour (here, a mix of ancient wheat and spelt)

  • 2 ½ tsp instant yeast

  • 60 g unrefined sugar

  • 10 g SAKAO Organic Matcha

  • ½ tsp sea salt

  • 240 ml warm oat milk

  • 60 g melted butter

  • 40 ml coconut cream

Matcha Glaze

Preparation

Start by preparing the filling. Mix the black sesame paste, sugar, butter, and coconut cream. Add a little water if needed to achieve a spreadable consistency: smooth, but firm enough to hold well in the buns. Set aside.

In the bowl of a stand mixer, combine the flour, yeast, sugar, matcha, and salt. Stir in the warm oat milk, then the melted butter and coconut cream.

Using the dough hook, mix on low speed until a ball begins to form. Continue kneading for about 5 minutes.

Then, place the dough on a lightly floured surface and knead by hand for 2 to 3 minutes. Cover with a damp cloth and let rest for 20 minutes.

Shaping the Buns

On a floured surface, roll out the dough with a rolling pin to form a rectangle of approximately 30 × 25 cm.

Evenly spread the black sesame filling over the dough, then add the golden and black sesame seeds.

Cut the dough into 6 strips, approximately 5 cm wide, then roll each strip tightly onto itself.

Place the rolls in a greased 20 × 30 cm baking dish. Cover with a damp cloth and let rest for about 1 hour.

Baking and Glazing

Preheat the oven to 180 °C (350 °F).

Meanwhile, prepare the glaze by mixing the icing sugar, oat milk, matcha, and salt in a small bowl until smooth.

Bake the buns for about 20 minutes, until the edges are lightly golden and the center of the buns is well-risen and cooked through.

Let them cool slightly before adding the matcha glaze.

These buns are particularly delicious when still warm! If you want to save them for later, wait until the last minute to add the glaze. This way, you can reheat them for a few minutes in the oven to restore their fluffy texture before glazing.

Enjoy!
