Matcha from Yame, Fukuoka Prefecture, is renowned for its creamy, sweet, umami, and nutty flavor.

The significant day-night temperature variations and the rich alluvial soils of the Chikugo River basin contribute to its umami.

The plantations in Yame are located between 200 and 600 meters above sea level, resulting in cooler nights and slower leaf growth compared to Uji, Nishio, or Kagoshima. This slower maturation promotes a higher L-theanine content, the amino acid that creates the sweetness and umami richness of matcha.
